Ingredients
  

  • 2 whole Eggs
  • 250 grams Greek Yogurt
  • 2 whole Garlic Gloves
  • 3 grams Fine Organic Sea Salt
  • A handful of fresh herbs I like a mix of coriander, mint, parsley
  • Copious amounts of unfiltered extra virgin olive oil
  • A sprinkling of paprika

Instructions
 

  • Peel the two garlic cloves, mix with the salt and puree to a fine paste
    2 whole Garlic Gloves, 3 grams Fine Organic Sea Salt
  • Mix the garlic paste with the yogurt (ideally ensure it is at room temperature before starting)
    250 grams Greek Yogurt
  • Chop the fresh herbs finely
    A handful of fresh herbs
  • Boil a pot of hot water. Once up to the boil, create a vortex in the water and add poach each egg individually. I find that poaching them for two minutes cooks the egg white, whilst leaving the yolk runny. Drain off thoroughly.
  • Add the eggs to the yogurt, combine with the freshly chopped herbs and the olive oil. Sprinkle a fine layer of paprika over the top.
  • Serve with some crusty freshly baked bread (sourdough is a treat) and enjoy
