Fermented foods of the world
A collection of posts related either to my travels and / or fermented foods from around the world. It is an eclectic mix of posts describing experiences and encounters as well as foods and drinks that I attempt to ferment as well as try on my travels. In addition to writing about fermented foods it also includes a range of recipes for making fermented foods.
One of the first topics covered was my experience of fermented food in Hungary focussing on the various vegetables, dishes and fermented condiments such as Eros Pista and my (albeit failure) to taste Kvass.
One of my next topics covered was my discovery of salted citrus fruits. The variety of tastes and uses of these gems is incredible. From adding salted lemon to a homemade pesto pasta with wild garlic, through to adding limes chopped up with chillis and coriander on a chuck steak chilli.
I have started to develop an interest in foraging wild foods. I have done this for a variety of reasons. Firstly to increase the variety of plant types that I am eating (I now regularly add Camellia and Primrose flowers to salads) to boost my ‘prebiotic’ intake. And secondly to possibly increase the numbers of bacteria I am consuming (perhaps I am getting different strains not available from farmed food).
This section is the one that really has me drooling both every time I read it, and also post to it!
